Healthy, Homemade Mexican Dish
At first this sounds more complicated than it really is. This meal is well worth some extra prep time to make!

Bulk cook the cilantro lime rice:
• 1 cup uncooked long grain brown rice
• Slightly more than 1 ½ cups water
• ¼ cup cilantro, chopped
• 1T olive oil or avocado oil
• Salt, to taste
• ½ lime

Other ingredients:
• 2 cups pico de gallo salsa
• 2 avocados
• 1-2 limes
• 2-3 cloves garlic, minced
• ¼ cup diced red onion
• 1 ½ pounds of pulled pork, shrimp, steak or chicken
• Optional seasonings for meat of choice
• Salt to taste
• Plain, greek yogurt

Prepare the following in advance:

Make the cilantro lime rice: Cook 1 cup long grain brown rice with slightly less water than normal, a little more than 1 ½ cups. In a pot on the stove top, boil water, add rice, cover and set to lowest setting. Watch at the end to make sure you do not burn rice. Should take about 35 minutes to fully cook. You want the rice to be a little on the dryer side, not mushy. Once the rice is cooked, set in fridge, covered, until chilled. Once chilled, in mixing bowl add rice, 1/2 - 1 lime's juice, small handful of chopped cilantro, salt and 1 T olive or avocado oil. Set aside.

Optional pulled pork: Buy about 3-4 pounds of pork shoulder (talk with your butcher for best cut when making pulled pork). This should be 1 large chunk of pork on the bone. Preheat oven to 275 degrees. In a roasting pan with rack add about ½ -1 inch of water to bottom, place pork on top of rack. Add seasonings to taste on pork (salt, pepper, garlic, lime juice). I kept mine very simple with just these. Cover with lid or tin foil. Place in oven for 3-4 hours. Meat should fall off the bone and be juicy and cooked thoroughly.

Other protein: If you choose not to make the pulled pork, cook 1 1/2 pounds of chicken, steak or shrimp thoroughly with salt and pepper to season.

Once the above is prepared, add the following to individual containers: ½ cup cilantro lime rice, ½ cup pico de gallo, 4-6 ounces of meat. (You should have left overs of the pulled pork)

Right before your meal:
Add 1/3 – ½ cup plain greek yogurt, fresh guacamole (smashed avocado, garlic, diced onion, lime, cilantro, salt). Mix and enjoy!!
