Glycerols are an alcohol-sugar compound and occur widely in nature. The alcohol part of the compound (not like beer or wine) is a solvent, making a glycerol fat soluble. Glycerols are part of the phospholipid structure of all cell membranes and are part of the structure of triglycerides (three fatty acids connected to one glycerol make a triglyceride).
