I laugh when I hear of people eating egg white omelets to avoid the cholesterol-laden yolk. There is no need to live in fear of the yolk. Researchers recently demonstrated that two egg yolks have more antioxidant power than an apple, making them a cardiovascular friendly food. The logic of attacking eggs has never made any sense to me. The data has always been woefully lacking. The bad rap has been undeserved. Sure there are better quality eggs – which are what I eat. The humor on this topic continues, as scientists now claim egg yolks are cardio friendly (the press release is titled, Eggs’ Antioxidant Properties May Help Prevent Heart Disease and Cancer1.) The same researchers earlier showed when eggs are digested they produce natural peptides that act like ACE inhibitors, helping to relax your vascular system and lower blood pressure. These researchers think eggs may actually have multiple types of antioxidant activity. Stay tuned, while the American Heart Association squirms in its chair. Share:
